"Supersaturation". The contents of the can are at thermal
equilibrium with the environment and gravity. Mixing up the
contents allows them to supersaturate the enclosed gas-filled
space. It is still evaporation, however, so some cooling
results. And it will warm back up (above ambient) as the gas
mixture desaturates.
