Taqman probes will not make dissociation curves (melting point curves) as far as I know, that works with SYBR Green (which you can do instead of Taqman probes). Taqman probes are very specific, so they are not really prone to need verification by acquiring melting point of PCR product. In actuality you have primers (forward and reverse) that are specific to your PCR target, and you also have a third complimentary Oligo (the labeled probe). So your Real time reactions and signal are due to both primers and probes binding to the right PCR target sequence.
