Assuming you're currently doing a degree I'd guess that your university has got subscriptions to a number of journals. Go to the library and ask at the help desk about finding that information. Personally I always found electronic journals were easier and quicker to search through, and theres a good chance that you'll be able to access these on university computers.

google it. Unlike the previous poster you probably won't find this info in articles unless you already known how to make such a mouse. Journal articles are so short and condensed that only the bare minimum info, not all the backgroudn for the techniques.

I second that, gibbie99. I too am new to this, and found that the papers/articles tend to assume that the reader knows the basic stem cell/molecular biology techniques and if you are new to this field, it goes over your head. So googling it is the best way. BTW, those are good sites suggestions.

Knockout/transgenic mice production:
for starters see boston-umc transgenic mouse production website:
Production of Transgenic Mice
check out the sections:
Production of Transgenic Mice
----------------Schematic overview
----------------DNA: construction and purification
----------------Identifying Transgenic founders
Production of Knockout Mice

Also consider buying a book, such as:
Manipulating the mouse embryo; Google books preview: Manipulating the Mouse Embryo: : a ... - Google Book Search
