did people ever realize the time differences of different cities across europe. Like that cities in the east had days that began and ended much earlier.

what were some of their theories that explained this?

Nope, not back then. It all revolved around God for them.

if the world WERE flat, and the sun revolved around the world, there would still be time differences simply because some are farther from the edge where the sun rises, and some are closer.

They wouldn't have noticed this as there is no way they could be in two places at once.

They didn't have planes to fly around and actually notice a time difference because if you're in a boat there's no way you're going to be able to tell from, say for example, Italy to China...

contrary to urban myth columbus didnt start the whole world is round story. it was suggested much earlier. the thing is that travel was so slow that it would be hard for them to notice a great difference. most of them never went furthher than twenty miles from their home

They thought that the world was flat and that it existed only as far as they could see. Time as such as by the hour did not exist until they needed to set a time for going into battle.
Then the one hand clock was invented. It is now called the hour hand. It moved so if the hand was half way ie: between 8 am and 9 am it would be 8:30 am.
An example of this type of clock can be seen at the Fortress of Louisberg in Nova Scoita Canada.

They didn't keep time the way we do today. It was measured by sunrise & sunset, and by lunar (the moon) cycles.

Please don't buy the idea that before Columbus people thought the Earth was flat. The ancient Greeks knew the Earth was round because they recognized that during a lunar eclipse, they were looking at the shadow of the Earth.

And Eratosthenes calculated the size of the Earth based on the distance from Alexandria to a place in the south where during the summer solstice the sun shone to the bottom of a deep well.
