It has something to do with the study of carbon based compounds and hydrocarbons; structure, composition, properties, and etc.

Organic chemistry is the chemistry of all carbon compounds, excluding some very few exception like compounds of carbon and elements from the sixth main group (especially carbon dioxide and carbon monooxide).
