| Hi everybody, it'd be great if you could help me out by answering the question! With little knowledge of amino acids and proteins, I am having a hard time justifying my biology report.. I did an experiment at school to investigate the enzyme activity of pepsin, using albumen as the substrate. I decided to measure the enzyme activity by the pH of a solution of pepsin and albumen mixed together, assuming that the acidity of the solution will increase as pepsin breaks down the proteins in egg white. Well, I kinna assumed that amino acids are acidic, but reading some info on the web tells me otherwise... all i know is that there are some acidic and some basic amino acids. Hopefully the amino acids in albumen are acidic? Please help!! |
