Help: Are amino acids in protein of egg white acidic?
Hi everybody, it'd be great if you could help me out by answering the question! With little knowledge of amino acids and proteins, I am having a hard time justifying my biology report..
I did an experiment at school to investigate the enzyme activity of pepsin, using albumen as the substrate. I decided to measure the enzyme activity by the pH of a solution of pepsin and albumen mixed together, assuming that the acidity of the solution will increase as pepsin breaks down the proteins in egg white. Well, I kinna assumed that amino acids are acidic, but reading some info on the web tells me otherwise... all i know is that there are some acidic and some basic amino acids. Hopefully the amino acids in albumen are acidic?
