Hi,
Does anyone knows a spectrophotometric technique to determine Vitamins from food samples?

Hello there Milpol,
i guess it depends which vitamin you are looking for.

For vitamin D, Ultraviolet (UV) absorption spectra can be recorded with a spectophotometer however mass spectrometry is also used for detection.

What vitamins are you looking to id?

Hello,
Some vitamins are also cofactors of certain enzymes and can be determined by determining the enzyme activity and having a standard curve.

See attached for vitamins C, E and A. Other vitamins may be more easily analyzed by HPLC, LCMS or other techniques.
